PaΓs, pronounced pie-ees, is a red wine grape with a prominent history in the Chilean wine industry. PaΓs was brought by Spanish conquistadors and for centuries was responsible for all the reds produced in the region. At the turn of the 21st century, it was overtaken by French varieties considered far more noble in quality and elegance. But now PaΓs is being appreciated for its fresh, charming and easy-drinking reds, reviving its long heritage. Try it with traditional Chilean dishes such as ‘Lentejas’ lentil and sausage stew or ‘CharquicΓ‘n’ slow-cooked beef stew with squash and potatoes.
